Geaux Roasted Street Corn

Locally grown fresh corn is hands-down one of the best things about Summer in Texas. Next time you're at the market grab a few ears. You can plan on one ear of corn per person. Corn is a great side to many different foods. Whether you're lighting-up the grill or turning on the oven, roasted street corn is easy to cook and incredibly delicious.

 

Ingredients

  • Fresh Corn on the Cob
  • Aluminum Foil
  • Unsalted Butter
  • Geaux Dry Rub

 

Instructions

  • If your corn is still in the husk go ahead and strip it down. The classic method would be to cook the corn in the husk itself, but it's a little easier to use aluminum foil.
  • Rinse off each ear of corn under cold water and remove any corn silk that may still be on the corn. Corn silk are the little thread like strings you see on the corn. There is a silk for every kernel of corn.
  • Grab your butter and evenly spread it entirely over each ear of corn. Don't be scared of it. Apply it generously. Real butter is best for flavor, but margarine or olive oil works too!
  • Grab your bag of Geaux rub. Don't have any? Order some here. Apply Geaux rub generously over each ear of corn. Try to spread it out evenly. It will stick on the butter nicely. Geaux is a favorite for street corn because it adds a nice pop of flavor and savory spice, without it being overwhelming.
  • Wrap each ear of corn in aluminum foil. The aluminum foil will help retain the moisture in the corn so it doesn't try out.
  • Place ears of wrapped corn in the oven at 400° F or on the grill. Cook for about 20 minutes. It's a good idea to rotate the ears of corn occasionally to help them cook evenly.
  • Let cool for 2-3 minutes and enjoy!
